begin with Christ

WE ALWAYS, ALWAYS begin with Christ and His Word.  We find in Ephesians ,  “See that you walk circumspectly . . . redeeming the time” (Eph. 5: 15– 16).   That’s our job, to redeem the time.  Christ is our Way and Truth and Life, and in that sense, our Time.   He redeems time through us.  The Orthodox meaning of time gives us the freedom to love, to take the risk to love .   Time and eternity are different; they are not mutually exclusive but complementary. We are not to become timeless but to transfigure time.   Some of our common expressions give us a view into how we can misuse time, such as “killing time” or “wasting time” or even “saving time.”

Raising children – in the world but not of the world –  truly this is a magnificent arduous labor – impossible without God

Whether your children attend private school, public school or are homeschooled, one of the best ways to give our children an excellent Orthodox education, is to take them to Church – not just on Sunday mornings, but Vespers and any Festal Liturgy or service that you can attend.   An Orthodox catechism begins at Baptism and is hands on : young lives fed by the Sacraments and steadfast timeless seasons of the Church :  integrated into the fabric of  liturgical life.

Life lived through the Church’s seasonal rhythms seeps into the core of a child’s being.  This is the perennial unshakable and fortifying foundation of Truth and Love.

 In a world where truth is relative,  our children are bombarded with the noise of consumerism peddling false messages of self worth, ephemeral instant gratuity and distorted images of what it means to be fully human, joyful and even content.   It’s constant drone it can be alluring.

A parent must “walk circumspectly” in the Faith and “redeem the time:”,  while they are yet young.  None of us  knows whether our child will become one who is part of the increasing numbers of youth leaving the Faith….  and so it is no vain labor to let the Lord build the house (Psalm 127:1) and strive as a family to live the Faith sincerely and wholeheartedly.

Faith is transmitted through parents; it is a living gift of nourishment.  Children and especially teenagers and young adults crave Truth and authenticity.  Parental devotion to the Lord  enables children to love and know their Creator – a thirst quenching, life sustaining relationship.  It is a noble goal : striving  to live the Greatest Commandment, rearing children in the Faith – through word and deed – bringing them to Church regularly and making that a priority.

It is necessary for everyone to know Scriptural teachings, and this is especially true for children.  Even at their age they are exposed to all sorts of folly and bad examples from popular entertainment.  Our children need remedies for all these things! We are so concerned with our children’s schooling,  if only we were equally zealous in bringing them up in the discipline and instruction of the Lord.

Many people these days omit gluten from their diets – and for various reasons.  Some have celiac disease, others have subclinical allergies and sensitivities to gluten.  A severe gluten allergy can cause a host of issues, severe anaphylaxis being the worst.  But even a sensitivity or subclinical allergy causes unseen inflammation and irritation to the body.  This can cause irritability in children, weight gain and other symptoms.

While bread has nourished civilizations for thousands of years, we have changed the constitution of modern wheat , to contain far more gluten than is present in heirloom gains such as emmer, farro, spelt and einkorn.  Coupled with that, our modern practices of producing bread with fast acting yeasts that do very little to break down and pregest the structure of the gluten compared with traditional methods of soaking or rising as a sourdough.

This has also set the stage for this gluten-free movement.  The tendency of individuals symptoms to improve when gluten is removed from the diet, or when lower gluten varieties of grain are used with traditional methods of preparation – along with clinical evidence from holistic practitioners bears out the reality that many  have a problem with modern wheat.

Our family became acquainted with gluten free foods about five years ago, when my dear sister in law gave up gluten, suspecting it was causing some of her health issues.  The reality is that she felt better when she did not consume it.  That gave us reason to experiment with alternatives to wheat whenever she was over to visit.

This is a favorite muffin, made with coconut flour instead of wheat flour.  It is moist and tasty and great with breakfast or as a snack with lunch.

A preparation tip we have discovered is that once you add the coconut flour, work quickly.  Have your muffin liners already in the pan.  Coconut flour can absorb a lot of liquid, so I have found that if I get distracted or have to wait for the oven to more fully preheat, the batter gets very thick and difficult to spoon out.

Orange Scented Blueberry Muffins

gluten free

Ingredients:

  • 6 eggs, beaten
  • 1/2 cup melted butter (you can use coconut oil or ghee)
  • 1 teaspoon pure vanilla extract
  • 1/4 cup agave, raw honey or maple syrup
  • 1/2 cup coconut flour
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon baking soda
  • 1 cup fresh organic blueberries
  • 1 teaspoon  orange zest

Preparation:

Preheat oven to 350F.

Place parchment muffin tin liners into muffin pan.  Combine eggs, butter, vanilla, maple syrup, orange zest and salt in large bowl.  Mix well.   Sift coconut flour and baking soda together and combine.  Fold dry ingredients in three batches into the wet ingredients.  Add blueberries.  Scoop 1/4 cup of batter into each of the muffin tin papers.

Bake in oven for 30-40 minutes.

With prayer and sanctity you can also help children at school.  Don’t attempt to correct bad situations with human methods. No good will come of this. You will only produce good results with prayer. Invoke the grace of God on all the children, for divine grace to enter their souls and transform them. That is what it means to be a Christian. You teachers transmit your anxiety ot the children, without realizing it, and this affects them. Anxiety dissolves with faith. What is it that we say?
