I’m just guessing that right about now you may be looking for mew Lenten recipes. This is usually when I am. And if you are, these Black Bean Burgers are for you! Normally I am not a fan of making a vegan version of dinners that should be meat… over the years my kids have always balked, but not with these. They are simple, tasty and got a thumbs up from 3 our of 3 of my kids.
Ingredients
- 2 cans black beans drained and mashed
- 1 small onion chopped
- 1/4 cup green onions chopped
- 4 tablespoons Adobo liquid (from a can of jalapenos in adobo sauce)
- 1/2 cup chopped cilantro
- 1 tablespoon taco seasoning
- 1/2 cup bread crumbs or oats that have been put into a blender to make small (this is optional but I find that if you do not use it the burgers are super squishy.
- salt and pepper
- 2 mashed avocados
- 4 tablespoons lime juice
- sliced red tomatoes (optional)
- sliced red onions (optional)

Preparation
- Add all ingredients except avocado and 2 tablespoons lime juice together and mix well to incorporate.
- Using a 1/2 cup measuring cup place beans into cup and then turn out onto your hand. This gives it a nice shape and makes forming the burgers a little easier.
- Cook burgers on cast iron skillet with a little olive oil. 5 minutes on each side on medium…. only flip once.
- In the meantime mix avocado and 2 tablespoons lime juice in a bowl
- Place burgers on bun. Top with guacamole and whatever other toppings you like.
