Almond Pear Cake {gluten free}

We had so many pears that were super soft so we decided to whip up my favorite almond pear cake.

It’s gluten free and has no added sugar (bonus!).

Ingredients:

3 cups almond flour (sometimes also called “almond meal/flour”)

5 eggs

1 teaspoon salt

3 teaspoons almond extract

1 teaspoon vanilla extract

1cup monk fruit sweetener (granulated)

1/4 cup melted coconut oil

2 -1/2 cups peeled and chopped fresh pear

INSTRUCTIONS

  1. Preheat oven to 375℉.
  2. Prepare an 8-inch spring-form pan with cooking spray, or a drop of coconut oil. Any 8 inch baking dish will do if a spring-form pan is not available.
  3. Measure out almond meal into a bowl.
  4. In a separate bowl, whisk together eggs and vanilla and almond extract .
  5. Add salt and monk fruit to eggs and extract mixture. Then add in melted coconut oil
  6. Mix wet ingredients into dry mixture, and stir just to combine until a smooth batter forms. Fold in your chopped pears.
  7. Pour the batter into your prepared pan, and bake for 35-40 minutes, or until a toothpick or knife comes out clean when the cake is pierced.
